If anyone else is doing a high-protein diet, you might be interested in this: I doubled the turkey and used 99% lean, which I didn't find dry at all, and halved the rice and used brown instead of white. I didn't use the sausage and I salted and peppered the rice. Wet your hands when dealing with the rice. Ground beef instead of sausage true arancini doesn’t have sausage in the middle. Meanwhile, sauté sausage meat; cook until brown breaking up into pieces with a wooden spoon as it cooks. I think it must be the Cuban version of this same idea…..yum! My only suggestion would be to salt the rice mixture a bit before pressing it into the pan. Thoughts? I used chicken sausage. seemed like a lot of meat… , OH MY GOSH!!!!
